Good and Tasty Tuesday: Ooddles of Noodles

As the weather here has taken a turn towards summer my feelings toward cooking has change.  I am loving our new little grill and with it the ability to cook outside again.  But there are days that doing much more than boiling water is beyond my abilities.  So as the temps crept into the 90's today I brought out a favorite taught to us by my amazing sis in law, Katy.
Cold Somen Noodles!! This wonderfully simple meal is the best for days you just can't even think about eating something warm.  Until now it has just been a very simple meal of cold somen noodles (a Japanese wheat noodle) and Memmi sauce.  Today I decided to add to it so it fit better in the good (healthy) category.
As you can see I added broccoli and carrots!

Somen Noodles with Broccoli and Carrots
1 to 4 rounds  Somen Noodles (follow directions on package, it only takes 3 mins to cook!)

1 tray              Ice
1/2 bag           Broccoli, steamed, chopped and chilled ( I use frozen because it is easier)
2                     Carrots, julienne or use cheese grater
                       Memmi or Somen broth


After cooking the noodle rinse with cold water until cool to touch. Strain.  Place ice in a bowl slightly larger than your strainer fill with enough water to cover the noodles in the strainer. 

 Dunk and swish noodles until ICE cold.  While chilling chop broccoli and cut carrots. 



 Place noodle in bowl with some of the ice cold water and add Memmi* to taste.


 I prefer more broth to water ratio than my husband.  Toss with the veggies and enjoy!

Prepare to be addicted! I just bought the 3lbs package of noodles.

I found all these ingredients at my local Asian food store but I know Safeway and Fred Meyers also carry them although for a much higher price.

*Kikkoman brand Memmi has MSG in it.  We try to avoid this chemical as it gives my hubs migraines so I was delighted to find the Somen broth I have pictured above!  You can also make your own from scratch but it requires Bonito Flakes which also contain MSG.

  1. That's looks MEGA yummy! I am a whore for noodles though, you could pretty much toss them with dog poo and I'd eat them. Broc and carrots are much healthier than dog poo though I bet. Good choice.
