Good and Tasty Tuesday: Chicken with Lemon and Pepper



I am really beginning to enjoy the thinking ahead and planning for Good and Tasty Tuesday!  I would like to thank Stay at Home Babe for giving me the extra push to write on my blog regularly.  And as my husband pointed out I am a lot like her that is why I really love her blog!

So for today's recipe I have chosen a really simple and delicious meal.  It was given to me orally by one of my MIL best friends and a great customer, Teresa B.   Oh boy did it turn out just as juicy and yummy as she said it would.

Chicken with Lemon and Pepper




Preheat oven for 350 degrees.

1        whole chicken


1/4 c  olive oil


2        lemons


1/4 c  salt
Himalayan Pink Salt
Just cause I had it!
Grind to preferred coarseness  








1/8 c  ground pepper



Prick lemons several times with fork.  Remove any extra parts from inside your chicken and then stuff the lemons inside.

 Slather the outside of the chicken with olive oil.  Generously sprinkle and grind salt and pepper over the outside of the chicken.



 Lay in roasting pan butt down and roast for 1.5 to 2 hours.
Go blueberry picking with Tia while you wait!


 Pull out of oven and cover with foil and let sit for 20 minutes.

  1. I do something really similar with my whole chickens. Want another tip? Before you prick the lemons, boil them whole for ten minutes (you'll need tongs to handle them after), but it has two benefits. 1. since the lemons are hot, it starts heating the chicken from the inside out so it cooks more evenly. 2. the juice in the lemon is hot so it evaporates and steams and makes the chicken taste even freaking better. Swear. Try it next time. Btw, when you prick the boiled lemons with the fork before you put them in the chicken, stand back or you'll get shot with steaming lemon juice in the eye. Not good. (P.S. I'll pay you a hundred kisses to take the uber obnoxious word verification off your comments. -xo)

  2. Wow, this sounds great!
    So what becomes of the lemons after the chicken's done? Can you eat them in some way or are they over with? Is there any juice left in them to squeeze over, say, potatoes~?

    I didn't check to see the status of the lemons after but squeezing them over potatoes sounds amazing. I have discovered it is easy to have Aili help with dinner than whine about wanting to be picked up...go figure.LOL

  5. I guess I have to give this chicken a try, looks super yummy and is so easy. I do a lot of chicken breasts with lemon or lime and herbs though. Is very good and easy as well.
